They have told her and me since i have called several times , that it recently changed that they are now allowing vaccinated people to visit patients. Also the patient would need to be fully vaccinated as well.

My uncle has been there for 2 weeks on life support. yesterday they took him off but it will be along road to recovery.

I'm not surprised.  The hospital's visiting policy is within its own discretion, especially since provinces have declared a state of medical emergency which allows the normal rules of "reasonable" to be bent.  Unless your aunt has a medical reason why she can't be vaccinated, she should be.  Her husband in the hospital should be vaccinated but if he can't be then the hospital is allowed to restrict visitors.  It's ugly when there's a covid outbreak at a hospital.

Without a court order allowing entry, there's little your Aunt can do about it, other than ask the Hospital what accommodations they can make.  It doesn't appear that they can meet outside.  Perhaps in an ambulance off site?  That will depend on his condition, of course.

If you're asking me about any way to insist on a visit, there isn't one I'm afraid.  Does that make sense?

even if they were to get vaccinated they still can't see each other since it takes up to 6 weeks for the full vaccine to work. Is there a way to fight that situation?

The province has declared a State of Emergency, so it can make orders without the usual process of going through the provincial legislature.  While it might be unconstitutional, that challenge will take a long time and in my opinion isn't likely to succeed.
