Can you tell me whether you have already worked in Canada as a child caregiver. ?

For this pilot project, you apply for an open work permit which is employer specific but does not have the medical restriction, along with your application for permanent residence so that you can get your permanent resident status faster after you have fulfilled the 2 year work requirement.
So, in your case, you can apply after you have received your medical exam result, your IELTS results and your assessment of your education and submit them along with your offer of employment and the other documentation required. It is important that your job offer is on the IMM 5983 Job Offer form and the details your employer puts down as your job duties match the requirements of a child caregiver listed in the National Occupation Classification ( NOC). The NOC code for child caregiver is 4411. There is a sublink in the link I have included below in the section entitled "Who Can Apply" to the NOC and to the IMM 5983.
Here is the link from the Canada Immigration website about the requirements of this program. I would suggest that you follow the requirements on the document checklist very carefully to make sure there are no delays in the processing of your application. There is a sublink to the checklist in the "How to Apply " section after you have clicked the in Canada application choice.

In my opinion, although it would be good to start accumulating the 24 months work experience needed for the program as soon as possible, you should wait to start your employment until you have applied under the Pilot project because your current work permit does not allow you to work with children. You do not want to risk violating conditions of your current work permit because this could jeopardize you getting an unrestricted work permit under the Pilot project.

You can start working once you apply for the pilot project and get your open work permit because your current work permit does not allow you to work with children.
If you apply separately now for a new unrestricted work permit which allows to work with children before you apply for the Pilot project, the processing time is around 3 months and you need to show that you have passed the medical examination.
If you think you will have all the documents ready for the pilot project soon, I would just wait and apply for a new work permit with the Pilot project application.

Yes, you can continue to work at your current job until you start working at the position offered under the Pilot project as long as your current work permit is still valid.

That's right - you cannot start your babysitting job until you get a work permit that allows you to work with children.
Are your husband and kids with you in Canada now and do they currently have work and study permits ?
In order to respond to your question about extending your current work permit if you don't get the assessment before September, 2020, can you tell me how you were eligible to get the work permit you are currently holding ?

You are able to extend your IEC work permits if you are still working for the same job and same employer . Is this true for you ?

I would try extending your work permit under the IEC if you think that getting your assessment will take a long time. If you do get this extension, you can submit proof that you passed your medical exams to get an unrestricted one and then you can start your babysitting job.
Your husband and kids can extend their visas along with you.
Is your husband still working at the same job now as when he first got his work permit under IEC ?

In that case, he might not get the extension but I would suggest that he still try. After your application for the Pilot project is approved, your husband and children will be entitled to work and study permits.
