If you believe their negligence cause the loss of your beloved horse you should sue them.
The problems you will face are that you will have to sue them in the jurisdiction where they live. You will have to prove that their negligence led to the death of your horse. And you can only sue for the financial loss because animals are treated as objects in the eyes of the law.

He was with them for damages as I've explained above. You would sue them for the cost of replacing the horse plus any veterinarian bills that you had to pay plus the money that you paid them to train your horse.
You could try to sue for emotional harm because judges are human beings after all but that may not work.
